Very dark grade maple syrup has light transmisson 0-24.9%. It is made at the very end of the season. Favored by chefs, this grade has a strong taste that works well in dishes where the distinct maple flavour profile needs to be more pronounced. This limited batch has a tingle in the aftertaste like anise.
