Dark grade maple syrup is defined by light transmittance of 25–49.9%. This late-season syrup has a stronger, more robust maple flavor, commonly with notes of caramel, brown sugar, and spice. As the syrup gets darker, vanilla notes become less pronounced. Depending on the harvest, it can also have fruit, toasted, or woody notes.
